After a busy three-day weekend, it’s time to get back into the groove of things, and Midweek Menu 177 is here to help you with that! An easy Air Fryer recipe, a make-ahead casserole, a versatile salad, and a delicious 3-ingredient Fruit Dip come together into a meal that you can serve in under 45 minutes.

After a holiday weekend packed with hearty food, there’s nothing better than a light meal that’s easy to make without tons of cleanup. I don’t like to do a lot of hands-on cooking after a big holiday, so this menu can actually be stretched into several meals.

My strategy is to make these recipes on Wednesday and then eat the leftovers through Friday. You can easily double or triple the deliciously creamy Fruit Dip, that way you can serve it as a dessert or a snack for the whole family. Serve it with seasonal fresh fruit, cookies, or pound cake for a refreshing treat everyone will love.

Cheesy Hashbrown Potato Casserole is another terrific recipe for leftovers. It’s easy to store in the fridge and reheat for breakfast, lunch, or dinner throughout the week.

I also like to prep and then store the Everyday Green Salad; if you leave off the dressing, then the salad recipe will stay fresh for about 3 days.
