NASHVILLE, Tenn. (WTVF) — Chef Edgar Victoria has crafted a menu that draws from his childhood in Mexico Town.
He enjoys to cook tacos, sopes, tlayudas, huaraches, and the avenue treats that have been abundant in the community he grew up in as a kid.
For now, he is been offering his foodstuff exterior Honeytree Meadery and at pop-ups all in excess of Nashville. On Sunday he’ll be offering his tacos at Geodis Park.
“I assume the way I like to share the tale is I failed to seem for the kitchen area. The kitchen area discovered me,” Victoria claimed
If you check with him discovering cooking was like falling in really like at first sight.
But, expanding up, Victoria did not even know how to function the microwave. Studying the essentials necessary a great deal of perform.
“I assume the most significant thing to that was not offering up. You know there was moments I was truly weary. I worked 15,18 hours. I did not get any sleep and I had to go again the upcoming day and do it all around all over again,” he stated.
He sooner or later decided to obtain a foods truck and provide up common Mexican dishes. The likes of which challenge people’s perception of what authentic Mexican meals truly is.
“I would see destinations advertising rice and beans with a piece of meat and a scoop of sour cream and people today consider that’s Mexican meals, or chimichangas, or Nachos,” he said.
And then the pandemic hit.
“I experienced $1,200 pounds in the lender and I just did not know what to do,” he said.
Right after biting into a taco, the idea for Alebrije arrived to him.
“I want to do corn like how my grandma applied to do it, but I want to provide all the street snacks, this sort of as the huaraches, and the avenue tacos, and the sopes,” Victoria reported.
Victoria has partnered up with Strategic Hospitality and his tacos will be offered on Nashville SC match times and for any celebration having location at GEODIS Park.
