The flavor of goat cheese is so well paired with the juicy sweet strawberries and crunchy pistachios which I love to toss with some basil. You can definitely skip the basil or use another herb of your choice like fresh oregano or thyme would be wonderful here too!
Goat cheese is an amazing cheese for appetizers are it’s super versatile. You can cook it, bake it, fry it, serve it cold and more! Also, goat cheese is semi soft so you can shape it, roll it, spread it, and that’s why I chose it to coat the berries today.
I love the sweet soft texture of goat cheese when paired with honey (which actually makes it more pliable) and herbs. This goat cheese appetizer, when chilled, firms up nicely and holds its shape around the strawberries.

For this easy goat cheese appetizer, creamy goat cheese is flavored with fresh thyme and honey. Then, a strawberry is coated in this creamy cheese mixture and rolled in a fragrant coating of crushed pistachios and fresh basil. Need I say more?
Once you mixed the goat cheese, take a tablespoon size ball.
Flatten the goat cheese into a disc and create a dent in the center.
Take your strawberry and place it in the dent.
Gently wrap the cheese all around it to cover the whole fruit entirely.
The beauty about covering the strawberries with goat cheese is, that it doesn’t have to be perfect. It will get all covered up in nuts anyways! So don’t overthink this step or waste time perfecting it.
Dip the goat cheese covered strawberry into the pistachio-basil mixture and roll it around.

Goat Cheese Appetizer

log of plain soft goat cheese -
pinch of salt and pepper
(or to taste) -

teaspoon
honey -

teaspoon
fresh thyme leaves -

strawberries
, washed, dried and stems removed -
1 1/2
cups
chopped pistachios -

teaspoon
fresh basil leaves chopped
Instructions

In a small bowl, mash the goat cheese with a fork to soften it up and season it with salt, pepper, thyme and honey. Mix it well and set aside.

Mix the pistachios and fresh basil in a separate wider bowl and set aside.

Take a slightly smaller than golf size ball of the goat cheese mixture and flatten it on the palm of your hand into about 1/8 inch thick circle creating a dent.

Place one strawberry in the center of the cheese and use both hands to carefully fold the cheese around the strawberry and begin rolling it around. This doesn’t have to be perfect or even, as long as all the strawberry is covered up with a thin layer of goat cheese.

Remove any excess cheese in areas of the strawberry and roll it again if necessary.

Place the strawberry in the pistachio plate and roll it around to coat evenly and place on a plate in a single layer.

Chill the goat cheese pistachio coated strawberries in the fridge for at least one hour and serve.
